It's officially the dog days of summer (we're registring at about 107 degrees where I am) and I just can't make myself cook dinner. However, I've also been unsuccessful in trying to convince myself it's ok to serve my already rotund self ice-cream for my evening meal. What are you guys making for dinner without passing out from the heat?

Um, how about some nice cold cereal? Or my new favorite, Texas Caviar. You take two cans of black eyed peas, one can white corn, one can yellow corn, one can black beans, one can diced tomatoes, one small can diced green chiles and one can sliced olives. Rinse and drain them all. Put them in a large bowl and add an entire bottle of zesty Italian dressing (I prefer fat free) and minced garlic. Eat it with tortilla chips, fritos, or just a spoon. If you like, you can also add chopped red onions and cilantro. I love, love, love it. It's Dionne's recipe and I can't get enough! Try it, you'll like it.
I haven't been making anything new lately, but I'm in to tacos, burritos and taco salad. That way, nothing is in the oven and you only have to cook the hamburger/beans once (before using the microwave) and prepare all the tomatoes/lettuce/cheese once as well. It's amazing how I cna fake myself into thinking I prepared a whole new meal.
Also, I totally don't blame you for the cooking thing. I had cereal twice today already....
